Xếp cá vào nồi, thêm ớt trái, ớt bột, hành tím băm, hai muỗng canh nước mắm, một muỗng canh đường, một muỗng cà phê nước màu kho cá, một muỗng cà phê muối và hai muỗng cà phê dầu ăn, lắc đều, ướp khoảng 30 phút.
Đặt nồi lên bếp đun lửa nhỏ, từ 10 đến 15 phút. Cho dưa cải chua vào đun cùng, châm vào nồi kho cá một ít nước sôi nóng, tiếp tục đun đến khi cá thấm gia vị, cá rút bớt nước và nêm nếm lại tùy theo khẩu vị.
Tắt bếp, rắc một ít hành lá đã thái nhỏ lên bề mặt. Múc ra đĩa dùng làm món mặn ăn với cơm.
