Chuẩn bị làm bún gạo chiên giòn: Ngâm bún gạo khô và nấm mèo vào nước lạnh cho nở mềm rồi vớt ra để ráo nước. Thái nhỏ nấm mèo. Gọt vỏ cà rốt, bào sợi. Nhặt sạch hành lá, thái nhỏ. Bóc vỏ hành tây băm nhỏ hạt lựu (có thể thay thế bằng hành tím). Nhặt sạch rau thơm, rau sống, rửa sạch, để ráo nước để dọn ăn kèm bún gạo chiên.
Trộn đều thịt băm, nấm mèo, hành tây, hành lá, hạt nêm, tiêu, đập 2 quả trứng gà vào trộn cùng (có thể thêm ít bún gạo để tạo sự kết dính hơn khi làm bún gạo chiên giòn nhé).
Cách làm bún gạo chiên giòn: Đun nóng dầu ăn trong chảo nhỏ, đập dập 1 tép tỏi cho vào đảo đều. Khi tỏi dậy mùi thì vớt bỏ tỏi, mở nhỏ lửa. Trải một lớp mỏng bún gạo vào chảo, dàn ra kín mặt chảo, thêm một lớp hỗn hợp thịt băm ở trên vào. Trên cùng là một lớp bún gạo nhé. Mở lửa to dần dân, khi mặt dưới bún gạo chiên giòn và vàng đều thì trở mặt, chiên giòn mặt bún gạo còn lại nhé.
